Want the secret ingredient for extra fluffy stacks?

This Pancake Day, ditch the flat and add the fizz, a splash of sparkling water makes your pancakes extra light and fluffy, trust us on this one.


Top Tips: 

Chill your bottle of sparkling water.
Cold temp = fluffier, softer and more delicate pancakes.
That’s just science.

A few lumps are okay! 
Overmixing causes gluten development and breaks the bubbles. 
Lots of stirring = sad and dense 🙁 

Ready, Set, Go!
Cook quick or the bubbles will dissipate.
Batter getting thick in between cooking? 
Add a small splash of fizz! 


Ingredients:

  • 230g Plain Four 
  • 1 tbsp Sugar 
  • Pinch of Salt 
  • 160ml Sparkling Water (chilled)
  • 1 Egg
  • 1 tsp Vanilla Extract (optional)
  • Toppings of choice! 
  • (a little bit of butter to oil the pan)

Let’s get started

Step 1: Combine your flour, sugar and salt.

Step 2: Add in your water, egg (and vanilla extract). Stir gently until combined.

Step 3: Keeping your pan on a low to medium heat, add a knob of butter to oil the pan.

Step 4: Cook your pancakes. Once bubbles start to form, flip them over. Use about half a ladle of batter per serving. 

Step 5: Add your favourite toppings and enjoy!
